Introduction
Bhindi masala is a simple, delicious dry curry made with fresh okra (ladyfinger) tossed in a tangy onion-tomato masala. The secret to non-slimy bhindi is cooking it on high heat without covering the pan. Ready in 30 minutes, it pairs beautifully with dal, roti or paratha.
Recipe facts
Preparation time: 10 minutes. Cooking time: 20 minutes. Total time: 30 minutes. Servings: 4. Difficulty: Easy.
Ingredients
- 500 g fresh okra (bhindi), washed, dried completely and cut into 1-inch pieces
- 3 tablespoons vegetable oil
- 1 teaspoon cumin seeds
- 1 large onion, thinly sliced
- 1 tablespoon ginger-garlic paste
- 2 medium tomatoes, chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 1 tablespoon coriander powder
- 1 teaspoon amchur (dry mango powder)
- 1 teaspoon salt, or to taste
- 2 tablespoons fresh coriander leaves, chopped
Instructions
- Make sure the okra is completely dry before cutting — any moisture makes it slimy. Cut into 1-inch pieces.
- Heat 2 tablespoons of oil in a wide pan over high heat. Add the okra in a single layer and sauté for 6–7 minutes, stirring occasionally, until lightly browned. Remove and set aside.
- In the same pan, heat the remaining oil. Add cumin seeds and let them crackle.
- Add the sliced onion and sauté on medium-high heat for 5 minutes until golden.
- Add ginger-garlic paste and cook for 1 minute. Add tomatoes, turmeric, red chilli powder and coriander powder; cook until the masala thickens and oil separates, about 6 minutes.
- Return the fried okra to the pan. Add salt and amchur, and toss gently to coat.
- Cook uncovered for 4–5 minutes on medium heat so the flavours combine.
- Garnish with coriander leaves and serve hot.
Helpful tips
Never cover the pan while cooking okra — trapped steam causes sliminess. Adding something sour (amchur, lemon juice or tomatoes) cuts the sliminess naturally. Use a wide pan so the okra fries rather than steams.
Substitutions
Amchur can be replaced with 1 tablespoon of lemon juice added at the end. Mustard oil gives a lovely pungent flavour if you prefer it over vegetable oil.
Storage
Store in an airtight container in the refrigerator for up to 2 days. Reheat in a pan (not the microwave) to keep the texture crisp. Freezing is not recommended.
Frequently asked questions
How do I stop bhindi from becoming slimy? Dry the okra fully before cutting, fry on high heat first, never cover the pan, and add a sour ingredient like amchur or lemon juice.
Can I use frozen okra? Yes, but thaw completely and pat very dry first.
What should I serve with bhindi masala? Best with roti or paratha and a simple dal.
