Crispy Corn Recipe

Crispy corn is the starter that Indian restaurants made famous and home cooks quietly adopted — sweet corn kernels boiled, dusted in flour and fried until each one wears a thin, crackling shell, then tossed hot with chilli, chaat masala and lemon. The pleasure is in the contrast: shattering crust, juicy burst, tangy spice, all in one bite. The only real rules are to dry the corn well before coating and to season it the second it leaves the oil, while the crust is still ready to drink in the spices.

Ingredients

For the crispy corn
  • 2 cups sweet corn kernels fresh or frozen, thawed
  • 4 tablespoons cornflour corn starch
  • 2 tablespoons rice flour for extra crunch
  • 1 tablespoon plain flour maida
  • 1/2 teaspoon black pepper powder
  • 1/2 teaspoon red chilli powder
  • Salt to taste
  • 1 to 2 tablespoons water only to help the coating cling
  • Oil for deep frying
For the spice toss
  • 1 small onion finely chopped
  • 1 green chilli finely chopped (optional)
  • 2 tablespoons fresh coriander leaves finely chopped
  • 1/2 teaspoon chaat masala
  • 1/2 teaspoon roasted cumin powder
  • 1/4 teaspoon red chilli powder or to taste
  • 1 tablespoon lemon juice

Method

  1. Boil the corn: cook the kernels in salted boiling water for 3 to 4 minutes until just tender, then drain in a sieve and leave for a full 10 minutes, shaking now and then, until they look dry and matte. Spread on a clean cloth or kitchen paper if they are still wet — this drying step decides how crisp the result will be.
  2. Coat the kernels: tip the dry corn into a wide bowl with the cornflour, rice flour, plain flour, pepper, chilli powder and salt. Toss well so every kernel is evenly dusted, then sprinkle in a tablespoon of water and toss again — the coating should cling in a thin, rough layer, not form a wet batter. Shake off the loose flour through the sieve.
  3. Heat oil in a deep, heavy pan on medium-high heat. Test with one kernel — it should sizzle at once and rise to the surface. (Stand back as corn fries: a deep pan and small batches keep any popping kernels safely inside.)
  4. Fry in 3 to 4 small batches without crowding, stirring gently once the crust sets, for 3 to 4 minutes per batch until the kernels are deep golden and visibly crisp. Scoop out with a slotted spoon straight away — they keep browning for a few seconds in the spoon.
  5. Drain each batch briefly on kitchen paper, then tip all the hot corn into a clean, dry bowl.
  6. Season immediately: scatter over the chaat masala, roasted cumin, extra chilli powder and a pinch more salt, and toss so the spices coat the hot crust. Fold in the onion, green chilli and coriander, pour over the lemon juice and toss once more.
  7. Serve at once in small bowls with lemon wedges — this is a starter that should reach the table still crackling.

Notes

Wet corn is the enemy twice over: it makes the coating gummy and it spits in hot oil. When in doubt, give it another five minutes in the sieve.
Fry in batches and let the oil come back to temperature between them — crowded, cooling oil gives soft corn, not crispy corn.
For a restaurant-style finish, toss the fried corn with a small knob of butter along with the spices; for a chilli-garlic version, add 1/2 teaspoon of garlic powder to the spice toss.
Leftovers lose their crackle fast. Re-crisp in a hot oven or air fryer for 4 to 5 minutes; the microwave will only soften them.
