An apple milkshake is the quiet achiever of the milkshake family — no ice cream needed, no cooking at all, just sweet apples blended with chilled milk, a whisper of cardamom and a pinch of cinnamon until the whole thing turns pale, frothy and creamy. The apple does double duty here: it sweetens the shake and gives it body, so the result tastes rich without being heavy. It is the kind of drink that works as a quick breakfast, an after-school refresher, or a light finish to a spicy meal — provided you drink it the moment it is made, while the froth is still standing.

Method
- Prep the apples: peel, core and chop them just before blending — cut apple browns within minutes, and browning dulls both the colour and the flavour of the shake. Work quickly and keep the pieces ready with the blender.
- Blend the base: put the apple pieces in the blender with the sugar or honey, cardamom, cinnamon and about 1/2 cup of the chilled milk. Blend until completely smooth, with no bits of apple skin or fibre left — this first thick purée is what gives the shake its body.
- Add the rest: pour in the remaining milk and the ice cubes, add the vanilla ice cream now if you are using it, and blend again for 20 to 30 seconds until the shake is frothy and pourable. Do not over-blend; once the froth forms, stop.
- Taste and adjust: sweet apples may need no extra sugar at all, while a tarter fruit will want another spoon. Add, blend for two seconds, and taste again.
- Pour into two tall glasses at once, scatter the chopped nuts or a dusting of cinnamon over the froth, and serve immediately with a straw — this shake waits for nobody.
Notes
- Peel the apples without exception: the skin blends gritty, can taste faintly bitter, and gives the shake an unappetising speckled look. The smooth version is always the peeled one.
- Serve and drink straight away. Apple oxidises and the shake darkens and separates on standing, and apple mixed with milk is at its best fresh — never make it ahead or store leftovers.
- Everything must be cold: chilled milk and ice are what make the shake frothy and refreshing. Warm or room-temperature milk gives a flat drink and can look split with sharper apples.
- For a vegan version, blend with chilled almond or oat milk and sweeten with maple syrup or sugar; for a thicker, breakfast-style shake, add half a banana or 2 tablespoons of rolled oats before blending.
