Introduction
Aloo gobi masala is one of the most loved vegetarian curries in North India — tender potatoes and cauliflower florets cooked in a spiced tomato and onion masala. It is a dry-style curry, perfect with hot rotis, parathas or jeera rice. This home-style recipe uses everyday spices and comes together in about 35 minutes.
Recipe facts
Preparation time: 10 minutes. Cooking time: 25 minutes. Total time: 35 minutes. Servings: 4. Difficulty: Easy.
Ingredients
- 3 medium potatoes (about 400 g), peeled and cut into 1-inch cubes
- 1 small cauliflower (about 400 g), cut into small florets
- 2 tablespoons mustard oil or vegetable oil
- 1 teaspoon cumin seeds
- 1 large onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 2 medium tomatoes, finely chopped
- 1 teaspoon turmeric powder
- 1 teaspoon red chilli powder
- 1 tablespoon coriander powder
- 1 teaspoon garam masala
- 1 teaspoon salt, or to taste
- 2 tablespoons fresh coriander leaves, chopped
- 100 ml water, as needed
Instructions
- Heat the oil in a large kadhai over medium heat. Add the cumin seeds and let them crackle for 20–30 seconds.
- Add the chopped onion and sauté for 5–6 minutes until golden brown at the edges.
- Stir in the ginger-garlic paste and cook for 1 minute until the raw smell disappears.
- Add the chopped tomatoes, turmeric, red chilli powder and coriander powder. Cook for 6–7 minutes, stirring, until the oil separates from the masala.
- Add the potato cubes and cauliflower florets. Sprinkle in the salt and mix well so every piece is coated in masala.
- Pour in the water, cover with a lid and cook on low-medium heat for 12–15 minutes, stirring once halfway, until the vegetables are tender.
- Sprinkle garam masala over the top, mix gently and cook uncovered for 2 minutes.
- Garnish with fresh coriander leaves and serve hot with roti, paratha or rice.
Helpful tips
Cut the potato and cauliflower into similar-sized pieces so they cook evenly. Do not overcook — the cauliflower should hold its shape, not turn mushy. For extra flavour, add a pinch of kasuri methi (dried fenugreek leaves) with the garam masala.
Substitutions
Mustard oil can be replaced with any neutral vegetable oil. Fresh tomatoes can be replaced with tinned chopped tomatoes or tomato puree.
Storage
Refrigerate leftovers in an airtight container for up to 3 days. Reheat gently with a splash of water. This curry also freezes well for up to 1 month.
Frequently asked questions
Can I make aloo gobi without onion and garlic? Yes. Skip the onion and garlic, increase the tomatoes slightly, and add a pinch of asafoetida (hing) with the cumin seeds.
Why does my cauliflower break apart? The florets were cut too small or overcooked — use medium florets and check after 12 minutes.
Is aloo gobi healthy? It is a light, vegetable-based curry cooked with minimal oil.
