Vegetable Pulao

Introduction

Vegetable pulao is a fragrant one-pot rice dish — long-grain basmati cooked with colourful vegetables and whole spices. Lighter than biryani but just as aromatic, it is perfect for lunchboxes, dinner parties or a comforting weeknight meal. Serve with raita and papad.

Recipe facts

Preparation time: 15 minutes (plus 20 minutes soaking). Cooking time: 25 minutes. Total time: 40 minutes. Servings: 4. Difficulty: Easy.

Ingredients

  • 1½ cups basmati rice, soaked 20 minutes and drained
  • 2 tablespoons ghee or oil
  • 1 teaspoon cumin seeds
  • 2 bay leaves
  • 4 green cardamoms
  • 4 cloves
  • 1-inch cinnamon stick
  • 1 large onion, thinly sliced
  • 1 tablespoon ginger-garlic paste
  • 1 cup mixed vegetables (carrots, beans, peas, cauliflower), chopped
  • 2 medium tomatoes, chopped (optional)
  • ½ teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • ½ teaspoon garam masala
  • 3 cups water
  • 1½ teaspoons salt, or to taste
  • 2 tablespoons fresh coriander and mint leaves, chopped

Instructions

  1. Soak the basmati rice for 20 minutes, then drain completely.
  2. Heat ghee in a heavy-bottomed pot or pressure cooker. Add cumin seeds, bay leaves, cardamoms, cloves and cinnamon; sauté 30 seconds until fragrant.
  3. Add the sliced onion and sauté 5–6 minutes until golden brown.
  4. Add ginger-garlic paste and cook 1 minute. Add the mixed vegetables and sauté 3–4 minutes.
  5. Add tomatoes (if using), turmeric, coriander powder and salt. Cook 2 minutes.
  6. Add the drained rice and gently toss for 1 minute so the grains get coated in the spiced oil.
  7. Pour in the water, add garam masala and bring to a boil. Cover, reduce to low heat and cook 12–15 minutes until the water is absorbed and rice is tender. (Pressure cooker: 1 whistle on medium heat.)
  8. Rest covered for 5 minutes, then fluff gently with a fork. Garnish with coriander and mint; serve with raita.

Helpful tips

The rice-to-water ratio is key: 1 cup rice to 2 cups water for this style of pulao. Do not stir the rice while it cooks — it breaks the long grains. Resting the pulao covered for 5 minutes finishes the steaming and keeps grains separate.

Substitutions

Any vegetables work: add mushrooms, baby corn, soya chunks or paneer cubes. Replace half the water with coconut milk for a richer, South Indian-style pulao.

Storage

Refrigerate in an airtight container for up to 3 days. Sprinkle a little water before reheating. Freezes well for up to 1 month.

Frequently asked questions

What is the difference between pulao and biryani? Pulao cooks rice and vegetables together in one pot with mild spices; biryani layers par-cooked rice with a rich masala and is more elaborate.

Why is my pulao sticky? Too much water, over-stirring, or not draining the soaked rice. Use aged basmati and the 1:2 ratio.

Can I make it in an Instant Pot? Yes — sauté everything on Sauté mode, add rice and water, and pressure cook on High for 5 minutes with natural release.
